To Full Body Truss: Using both hands you must open the truss and place under the left wing between the tip and the flat to fold the wings back, repeat with the right wing and tip to secure the truss, take the truss and pull up then back while avoiding the neck in preparation to create an x on the back. To create the X you must rotate your hand clockwise while pulling down to ensure the X is in the middle, then you must place the truss on your thumbs to tie the hocks. You will then slide your thumbs underneath the hocks and release to complete trussing. Lastly, wrap your fingers around the hock lifting up the chicken to place on the conveyer belt. To Hock Truss: you place the hocks together and tie them up with a small truss.
